Quick and easy Roasts for camp ovens!
Firstly, the size of the camp oven that you need will depend on the number of people that you will be feeding. Sizes range from 2 quarts (1.9 litres) upto 12 quarts (11.35 litres). We use a 4.5 quart (4.25 litres) camp oven and it will feed 2 adults and 2 children.
A handy item to have is a lid lifter, but be careful as you lift the lid that the roast has not stuck to the underside. Now you are set to cook!
You can use Beef, Lamb or Pork, although Pork can dry out quite quickly depending on the heat so you will have to check it regularly. High heat is great at first, but then back off the heat. You can also use fish however wrap it up in aluminum foil first so it doesn't breakdown and get lost throughout the sauce and veges.
The ingredients we use are :
Meat of your choice (we use lamb)
Vegetables of your choice (we use sweet potato, white potato, onion, pumpkin)
Cooking time will vary on size of camp oven, size of roast, and mainly the heat of the coals. Do not put the oven directly in the fire. It may take you a few roasts to work out how much is too much heat or not enough.
We usually dig a hole about 2 inches deep, fill it with red coals then put some more coals on top of the oven lid.
Check the food every hour or so to make sure the heat is cooking the food well.
Tip: Less heat, longer cook time! Even up to 4 hours if you have the time.
